The Painted Pig Opens its Doors in Carbondale, Colorado

CARBONDALE, CO – September 2023 – This October, Carbondale, Colorado, will welcome a captivating new culinary and community destination as The Painted Pig opens its doors at 689 Main St., across from the Carbondale Post Office. This multifaceted establishment promises to be a charming, delicious, and wholesome tribute to the local mountain community, offering a restaurant, café, event space, mercantile, and boutique hotel rooms.

Steeped in a legacy that spans over a century in the Roaring Fork Valley, The team at the Painted Pig has a deep connection to the region's history and culture. They have curated an establishment that reflects the heart and soul of Carbondale.

By day, The Painted Pig will capture the essence of a quintessential Colorado mountain community café. Visitors can savor the rich aroma of Color Coffee, a high-elevation, specialty coffee roaster from our neighboring  town, Eagle, CO. Espresso drinks, pour over coffee and a variety of tea options will be available. In an effort to provide a skip-the-line solution, and to highlight an element of trust you can only find in small towns, there will be a drip coffee station where guests can serve themselves on the honor system. Throughout the day, the café will offer an array of grab-and-go breakfast and lunch options, from artisanal pastries and breads to wholesome sandwiches, and salads. 

As the sun sets, The Painted Pig transforms into a vibrant family-style restaurant. Executive Chef Gino, renowned for his culinary mastery in Peruvian cuisine, will present a menu that marries the flavors of Peru and Italy's Valle d'Aosta, creating a culinary journey that is both unique and delicious. On the drink menu, the winemakers at Aquila Cellars employ innovative blends and fermentation techniques in their ever-evolving line of wines, ciders, cordials, and cocktail syrups derived from Colorado fruits and botanicals. A regional beer partnership with award-winning Outer Range Brewing will keep the shelves stocked with inventive brews.

What sets The Painted Pig apart is its commitment to community. The restaurant will source ingredients locally whenever possible, supporting regional farmers and producers. The doors will be open throughout the day, serving the needs of the community from breakfast, through lunch and well into the evening. This dedication to sustainability and community is at the core of The Painted Pig's mission.

The mercantile intends to provide Carbondale with a new standard of pantry items and to provide products that are grounded in quality and regional excellence. 

For those seeking more than just a meal, The Painted Pig provides a cozy haven with two boutique hotel rooms, offering a stylish and comfortable retreat for visitors looking to explore the charm of Carbondale and the surrounding area. The hospitality from the restaurant is expanded to our hotel guests. The goal is to make each guest feel like a local.
